SAN-150 Natures Edition — African Ebony & Mizume-Zakura: A Meeting of Two Natural Souls

For the SAN-150, Master Hattori has selected a combination of two exceptional woods from different corners of the world: African Ebony and Mizume-Zakura (水目桜).

African Ebony is among the prized hardwoods on earth — exceptionally dense, deeply black, and enduring. Its rich, dark tone brings a sense of refined luxury and timeless strength. Mizume-Zakura, a native Japanese birch species, offers a gentle contrast — its warm, soft grain has been treasured by Japanese craftsmen for generations. Master Hattori himself has used Mizume-Zakura since his early years as a knife maker, recognizing it as one of the fine handle materials Japan’s forests have to offer.

Together, these two woods — one from the forests of Africa, one from the mountains of Japan — create a custom combination handle of quiet sophistication. The deep strength of African Ebony meets the gentle warmth of Mizume-Zakura. The result is a knife that feels as natural in the hand as it looks beautiful on display.

Just as each tree grows slowly and uniquely over decades, each knife in this series carries its own natural character. No two handles are identical. Each one is a living record of the forest it came from — and each hilt bears an individually engraved serial number, a mark of its singular identity.

About Hattori 傘 SAN Limited Edition

Grand Master Hattori became 80 years old. In Japan, a person’s 80th birthday is commemorated with a special celebration called 傘寿 / Sanju. To celebrate this milestone and his proud achievements as a Master craftsman, Hattori created the 傘 SAN Limited Edition — a series of strictly limited-production knives, each one a testament to a lifetime of dedication to the craft.

For the SAN-150, Master Hattori has once again chosen the #3717 Classic Tanto — one of the most beloved knives in the entire Hattori collection — as the foundation. The blade retains the iconic reverse Tanto tip with a 4-inch VG-10 hollow-ground blade in a half-mirror polish. Each knife is fitted with a solid Brass hilt and buttcap, Black Fiber spacers, and comes with a dark brown leather sheath. The blade bears the signature 傘 SAN etching, and each piece is presented in a Hattori Presentation Box.

Only 5 pieces exist in the world — each one grown from the earth, shaped by a master’s hands.
